Beyond the slice: 5 Watermelon recipes perfect for summer.

I’ve been eating my weight in watermelon these days. I just can’t seem to beat the heat and nothing is more refreshing than a slice of cool watermelon while sitting on my backyard swing after dinner.

But watermelon can be used in so many more ways than just eaten by the slice. Appetizer, salad, dessert, or beverage -- you can incorporate watermelon into all of these for a cool twist on mealtime.

I made this Watermelon Salsa last year for my family in the sweltering Arizona summer. No one could believe that the salsa was made with watermelon. It’s sweet, spicy and completely unique.

3. Watermelon Cake

This Watermelon Cake Recipe doesn’t actually have any watermelon in it but it’s eye catching and adorable. This is on my to-try list.

4. Watermelon Tart

This Healthy Watermelon Tart looks like a cake but is actually a creatively cut watermelon with healthy yogurt “frosting” and decorated with sliced almonds and blueberries. This is one dessert that if you ate it all by yourself, you wouldn’t gain 10 lbs and earn a life sentence to the gym.

5. Ultimate Summer Picnic Punch

When there’s thirst to be quenched try this rejuvenating Ultimate Summer Picnic Punch. With just a couple of ingredients like watermelon, strawberries, and lemon juice, you’ve got a quintessential summer drink in less than 10 minutes.

I’m only getting started!!! Watermelon is inexpensive, fresh, and the perfect key ingredient to any summer dish.
