For much of my life, I skipped breakfast. Once, in the sixth grade, my math teacher was trying to prove some point regarding probability and asked me -- in front of the whole class -- what I had for breakfast. My answer? Nothing. She wasn’t pleased.

But the fact is that having a good breakfast is an important start to a healthy day. It fuels your body and gets you going. So, in the last few years I have learned to like breakfast -- on my terms.

I still am not a huge fan of traditional fare (though my kids love eggs, pancakes, etc.), but if you offer me up something a little offbeat, I am smitten. Here are some of my faves:

Steel Cut Success


My editor, Erin, loves steel cut oats … and who can blame her? The thick, creamy oats are awesome for you and can be flavored however you like. Make morning time easy by making oatmeal ahead of time and nuking to reheat.

Stack It Up


Eggs can be so boring, and breakfast sandwiches aren’t that exciting either. But this riff -- a Ham, Egg and Swiss Breakfast Stack -- is fun and a step out of the ordinary.

You start with toast (I recommend using a whole grain bread that you love). Then, layer it with lettuce, ham, cheese and egg. You could also add tomato to the mix. It takes about 10 minutes tops to throw together.

Get a Little Sweet-Savory


Start with an English muffin. Toast it, spread with preserves, top with a soft cheese like brie or goat cheese (and do it fast, so the muffin is still warm). Serve. Delish.
