All Chocolate is Not Created Equal


Chocolate. That just has to be the best word in any language. Picture luscious puddles of molten chocolate, the snap of a dark chocolate bar, or a slice of decadent chocolate cake. Just the mention of the word chocolate makes a mouth water.

But not all chocolate is created equal -- for eating or baking. Chocolate deserves a closer look, so come along while we talk chocolate!

Chocolate Around the World


Travelers know that chocolate quality and taste vary around the globe. Methods and ingredients are different between chocolate manufacturers, and different countries have different requirements for chocolate content and labeling.

Europe is a hot spot for amazing chocolate. If you've tasted Belgian or Swiss chocolate, you discovered why chocolate from that area of the world is considered some of the best anywhere.

Many chocolatiers in those countries and around Europe still make chocolate the Old World way -- in small batches by hand -- and it's hard to beat that quality.

But these days, many larger European chocolate brands are as close as the aisle of your favorite big box store, and American companies have risen to the challenge of satisfying a country of flat-out chocolate fanatics.

Chocolate Quality Basics


Chocolate quality depends on the ingredients used and the processing methods. Richer, higher quality chocolate is processed longer and contains the purest ingredients.

The proportions of those ingredients and the processing methods determine the chocolate taste and texture. In general, dark chocolate contains 70% or more cocoa, while milk chocolate contains a lesser amount and includes milk as well.
