Everybody has one day of the week where it's just impossibly tough to get dinner on the table. Maybe it's the night you have to work late and fight the worst traffic of the day. Maybe it's the night when all of your children's activities converge in one crushing dash from school to studio to field. Maybe it's something completely different.
For me, my crazy night is currently Monday. My work schedule is crazy on Mondays. Add in my two young kids, preschool and catching up on weekend emails (I try not to turn my computer on during the weekend), and you've got a harried mom who doesn't want to spend any more time than she needs to in the kitchen.
That's when easy dinners are most valuable. It's always tempting to just call in a pizza or something, but that adds up and honestly, I enjoy making my kids a fresh dinner.
Pork chops are a simple, easy, quick protein that can be tossed in a skillet or in the oven and cooked up mighty quick. Thin-cut chops are perfect for when you are really in a time crunch since they cook up quickly and evenly. But, if you have time, thicker cut chops (think 1 inch thick or so) can be more satisfying.
Round out the meal with a fast carb like Parsley Buttered Couscous
or Quick Brown Rice and Onions
and a vegetable or two. Perhaps a green salad and steamed peas? Or maybe Honeyed Carrots
and a chopped salad.
