It's a little embarrassing but until a few years ago, I didn't eat shrimp. For some reason, I had a complete aversion to them as a child and avoided them like the plague.
How did I get over my aversion? Honestly, I was pregnant with my daughter and saw my sister eating fried shrimp and the rest, as they say, is history. My, how things change. These days, I could eat shrimp daily.
Buying shrimp can get expensive if you just buy it when you need it. You are better off purchasing frozen shrimp when it's on sale and just defrosting as you need some. I know - it can sound a little odd to recommend frozen shrimp over the ones from your store's fishmonger. But I will let you in on a little secret: Most shrimp sold at grocery store shrimp counter are ones that were frozen and defrosted (just ask! They will tell you so). You pay a premium to have the store do the defrosting for you.
That said, bags of cooked shrimp are a freezer staple in my house. Why? Well, in a pinch, I can defrost some for a quick shrimp cocktail appetizer when company comes. Or I can use a few, sans tails, to toss with some lettuce, cucumber and vinaigrette for a delicious and easy lunch wrap. They are also great for throwing on salads.
I also try to keep raw shrimp on hand as well - also frozen - since they are fab for making things like my Easy Grilled Shrimp
, which are a fab and fast version that really brings out a great, flavorful meatiness in the shrimp. Serve them on a bed of lettuce with some sliced avocado and a bit of Sesame-Soy Dressing
(found in most major grocery stores, or make your own).
Another fast favorite of mine is Shrimp Scampi
. It's easy and flavorful. Try whipping up a batch and spreading it on a homemade pizza before baking. It's OMG- good.
