Getting into Slow Cooking

A couple months ago, Erin suggested that I work on some slow cooker recipes. It was one of several suggestions, so I didn’t choose to do that at the time. When the request appeared the next month, I had to confess, I didn’t have a functioning slow cooker.

Heck, I wasn’t even sure I knew how to use one. The last few times I used a slow cooker, I burned the contents. Badly. (Yes, it was set to low. No, I didn’t leave it for too long.) To say I was no into the idea of using one again would be a massive understatement.

Erin’s response to my confession? We’ll have to get you one then.

Gulp.

And she did. Earlier this week, a ginormous box appeared on my front porch. Inside it was a shiny new Oval Stay or Go Slow Cooker by Hamilton Beach. The slow cooker holds 6 quarts of food, perfect for a family (or a party!).

Despite my trepidation, I was actually excited to try it out. Back in high school and college, I rocked the slow cooker often. But as an adult, I seemed to lose my ability to set it, forget it and actually have an edible dinner.

So, out came the new slow cooker. In went the ingredients for our lovely Susan’s Slow Cooker Pulled BBQ Pork Sandwiches.

Easy Slow Cooker Recipe

Tossing the ingredients together took about 10 minutes, and at 6 p.m. when it was time to eat, all I had to do was pull the pork (1 minute), make the sandwiches (2 minutes) and throw a mini salad on each plate (2 minutes). So, essentially, dinner was on the table in 5 minutes (15 if you count the prep time earlier in the day).

Color me a convert.
