Caramelized Shallot Hummus

Ingredients

  • 1 (15 oz.) can garbanzo beans, drained and rinsed
  • 2 tbsp toasted sesame seeds
  • 1 lemon, juiced
  • 1 clove garlic
  • 3 tbsp olive oil, divided
  • 2 shallots, diced

Steps

    Combine the garbanzo beans, toasted sesame seeds, lemon juice, garlic and olive oil in the bowl of a food processor. Pulse until smooth.

    Heat 1 tbsp olive oil in a skillet on medium-low. Add the chopped scallions. Cook until caramelized. Stir into the hummus, reserving 1 tbsp to sprinkle on top.
