Zucchini – also known as summer squash – abounds in the warmer months, so take advantage of the abundance with these awesome recipes.


If you've got a summer squash plant that's sprouting fruit faster than you can say "tempura-battered zucchini blossoms," it may be time to do a little harvesting and head into the kitchen.

Versatility is zucchini's best quality. You can batter and fry its blossoms, shred it up and make fritters, toss into a quick bread recipe or just serve it sauteed in a little olive oil. We have a few recipes that we're partial to; here they are in all their veggie-packed glory:
