Nice, firm, yellow, unspotted bananas are great for eating; aged, spotted, mushy bananas, however, are best for banana bread. A good trick is to take your overripe bananas and chuck them in the freezer, peel and all, until you're ready to bake. You can peel them, mush them and throw them in a bag, if you want, but it’s not necessary.
