Want to eat like a cavehuman, but don’t know if you can live without life’s little indulgences? Since paleo eating looks down on grains, gluten, and all the white flour stuff, it’s easy to feel like you’ll be giving up everything glorious by going paleo.

Good news! Paleo alternatives for breakfast favorites are even easier to make than the classic recipes themselves. Paleo pancakes can be made with only an egg and banana. And paleo crepes call for just four pantry basics—eggs, coconut flour, coconut oil, and water.

The best part? You won’t even know this recipe is a “diet” version. It’s absolutely as tender and scrumptious as the traditional. Only way, way easier. And 100% approved for paleo fans.

Grab a blender and get ready to make paleo crepes! Here’s how:

 

Here’s your ingredient lineup. It’s so simple, you don’t even need a recipe!

 

Place all ingredients into a blender and blend! That’s it! I like to blend on high until the mixture becomes frothy; I think it makes the crepes come out just a smidgen fluffier and richer.

 

Pour a small amount of the crepe mixture into a nonstick ceramic pan heated over medium heat.

 

Quickly swirl your pan to spread the batter in a thin, round layer across the entire bottom of your pan. Then let the crepe sit and cook—no need to flip it!

 

The crepe is ready when it begins to set up and the top is no longer sticky to the touch.

 

Flip the pan quickly upside down, and the crepe will fall right onto your serving platter. I prefer to flip the crepes on little pieces of parchment first, because it keeps them from sticking to themselves and makes it easy to cool them slightly before filling.

 

Speaking of the filling… most crepes are topped with decadent cream, sweetened jam, and powdered sugar. Though some paleo eaters enjoy whipped cream, you can keep your fillings totally paleo-approved by serving them with fresh organic berries. Coconut cream, honey, nuts, and raw cacao nibs are also favorites.
