While I am not someone who needs to eat meat daily (or who wants to, for that matter), I do love me a good steak. What is that exactly? Well, a good steak is marbleized (that's meat-eater speak for having ribbons of fat running through the flesh), which makes it juicy and bursting with amazing flavor.


But, that said, my family and I try to keep our fare to the lighter side of things most of the time. So those marbleized steaks are more of a special treat than a frequent dinner.


In terms of beef, flank steak is a favorite lean cut of ours. When seasoned well and cut right, it's tender and flavorful. There are so many ways to serve it too. With a nice sauce and a veg, it's perfect over rice. When it's rubbed with a delicious concoction, it's fantastic with mashed potatoes. Any which way you make it, it can be sliced on a salad.


Also, since it's a cut that tends to come in bigger portions, it lends itself very well to two-for-one meals, where you cook once and eat twice. Leftovers can dot fried rice or fill a wrap (with some veggies and/or rice), among other things.
