Remember when muffins used to be the thing for morning eats? Everybody ate them, all with a favorite - blueberry, corn, cranberry ... Then someone had the brilliant idea to market just the muffin tops (those are the best part of a muffin, aren't they?). Next thing you know, they were being mass produced and could be toasted to perfection. Oh, those were the days.


Muffins might not enjoy the popularity they once did, but they are still a great way to start the day. They are delicious with all sorts of creative flavorings and can even pack a punch of fiber (we all know how important fiber is to a healthy body, right?).


You know what else? Muffins are surprisingly easy to make with basic pantry items. Really. So, why not surprise your family with some?



The other day, I did just that. While I am not a big fan of making complicated breakfasts on weekdays, I do like to make special things for my kids every now and again. While my two kids played in the morning, I whipped up a batch of Applesauce Graham Muffins with Streusel Topping, making a few small changes to the recipes. I used whole wheat pastry flour to make them a little healthier and I upped the graham crumbs to ¾ cup and added 1 tablespoon of canola oil to the mix.


When they heard the sounds of mixing and measure, they both came running to find out what I was making. My children love helping out in the kitchen, and although they didn't get to help this time, muffins are a great thing to make with kids since there is plenty of opportunity for little hands to help out.


Anyway, the resulting muffins were sweet and moist with a delightful crumb top. Perfect to start a busy work day. The kids? They loved 'em.
