I decided to write about bacon for today's post, I thought it would be a cinch. After all, who doesn't love bacon? When it's cooked up well, it develops this amazing crispiness with a succulent, salty flavor. I certainly adore it.

The bacon I most often purchase comes from my local grocer. It's cut in the butcher shop into thick-ish strips. My favorite variety is maple smoked, which adds this amazing richness to the flavor - unfortunately the store doesn't actually label its bacon beyond the name "slab bacon," so you never know if you are getting maple smoked until you get it home and cook it ... but then you definitely know by the familiar, fabulous smell.

In any case, bacon and eggs is a favorite breakfast of mine. My husband is really partial to eggs benedict, which is made with Canadian bacon.

Even so, I don't make bacon as much as I used to. In order to lose weight, bacon had to go from being something we eat to something we eat on occasion. It's a good change, really. Moderation is important for a healthy lifestyle - and really, bacon is something to practice moderation with.



That said, I still cook with bacon. However, instead of having an open package in my fridge, I freeze it in a resealable bag as soon as I buy it. If I need some for a recipe, then I take it out and cut off about one-inch (perpendicularly to the strips). That's about the same as one strip of bacon. (Hat tip to Food Network for that tip.)

As a result, I no longer feel like I am under the gun to finish up a package of bacon or risk losing it.
