Recently, when I was at a Christmas luncheon, two of my colleagues were talking about how they aren't fond of cooking. Then one admitted that she makes a mean sauce.

Within my family, the standard for sauce is my grandmother's recipe. It was her signature dish, and one that she was rightfully proud of. She would start cooking the rich and meaty sauce early in the day, letting it simmer for hours. When evening would roll around, she would serve it over thick strands of spaghetti with slices of Italian bread and a sprinkle of parmesan.
That's one of those foods that I just crave. No one can top my grandmother's sauce. Not even me.
Anyway, the nice thing about spaghetti and the associated sauce is that you can customize it so much. Add a chicken *** and some cheese and you have chicken parmesan. A few meatballs?
