2. Mexican Molletes by Girl Versus Dough

The Facebook comments for this recipe include lots of "me gustas"! The next time you need a quick meal, try these molletes. They only require a few ingredients, which you very possibly have on hand already. And as Stephanie points out, you can substitute in other beans and toppings, like pico de gallo, chorizo or guacamole.

3. Chicken Shawarma by Food In My Beard

If you've never had it, shawarma is kind of like a Middle Eastern burrito. Instead of a tortilla, you're wrapping all kinds of goodness inside lavosh bread. And although it would be impressive, you don't need a slowly rotating spit in your kitchen. Grilled chicken will work just fine!
