Pops are all the rage right now. Cake pops, brownie pops, push pops and cookie pops are everywhere you look. But this is
St Patrick’s Day, so I used my favorite green fruit to make these pops: the kiwi. The result? Kiwi pops. A healthier, easier-to-make pop that you don’t have to be Irish to enjoy! The combo of the slightly tart kiwi with the smooth chocolate is to die for, trust me.
To make kiwi pops, all you need are kiwis, chocolate, and Popsicle sticks. Get as creative as you want with your dipping chocolate. I used milk chocolate, along with some green and yellow candy melts. You can use dark chocolate or white chocolate, too!
Here are the super-easy steps to pop perfection:
- Peel kiwis and cut into three thick sections. This helps ensure the pop is the right size.
- Push a popsicle stick into each section, and stick them in the freezer to harden.
- Melt your chocolate or candy melts. You can use the double broiler method, or the microwave. (Either way, check and stir frequently to avoid burning.) I like to add a teaspoon or two of vegetable shortening to my chocolate to make it smooth and slightly thinner.
- Hold onto the popsicle stick, and dip kiwi sections in the chocolate. Tap to remove excess chocolate. Lay them flat to dry (a cookie sheet draped in parchment paper works well), and put them back in the freezer to harden.
Don’t hesitate to get creative with your presentation!
I used a paring knife to cut some of my kiwi sections into clover shapes. A field of clovers makes a cute gift for a friend. Feeling extra talented? Include a lucky four-leaf one!
A group of “gold coins” also makes a nice pot of gold! I used yellow candy melts for these. Wouldn’t you love to find this at the end of a rainbow?
Decorate the pops with sprinkles to make a display cute enough to catch a leprechaun! A tip for using sprinkles: the chocolate hardens quickly on the frozen kiwi, so put the sprinkles on right away after dipping.
Your family and friends are sure to love these pops. They might even be good enough to keep you from getting pinched! (Though I have to recommend you still wear green—just to be safe!)
