I love all the delicious homemade comfort foods we get to enjoy for Thanksgiving each year, but often I have more leftover turkey than I’d like. When I’m tired of eating leftover turkey, I freeze it in 1 or 2 pound increments in the freezer for later use. Most casseroles that call for chicken can easily be made with turkey as a substitution.

This One Pot Turkey Curry is no exception. It’s nice to enjoy a meal with the leftover turkey I worked so hard to make that doesn’t taste anything like the Thanksgiving meal we just had. I especially love this meal because it’s incredibly simple. Truly a one pot, one dish meal -- cooked in one pot and served in one dish. It doesn’t get much easier than that. And I know that the last thing you want to do after a busy week of Thanksgiving Preparation is to spend a lot of time cleaning up another elaborate meal.
