Weekends are for catching up on the things that fall by the wayside. They are for enjoying, spending time with family and having fun too. And they are for delicious food that you might not have time for during the week.

This Honey Chipotle Barbecue Shredded Beef recipe is for weekends. It takes five to six hours in the slow cooker, and creates a tender, easy shredded beef that goes fabulously with some delicious bread (shown with challah – but it’s also good with cornbread), a vegetable and perhaps some macaroni and cheese.

Shredded Beef Recipe

In terms of difficulty, this this isn't difficult at all. You slice up some onions, toss in stew beef and whisk together a little barbecue, honey and chipotle powder. Pour that sauce in and it’s ready to cook.

Slow Cooker Beef

Wondering where you can find chipotle powder? This spicy chile powder is sold at spice shops like Penzey’s, The Spice House and on Amazon. It’s sometimes also called ground chipotle peppers, and it’s a spice like cayenne pepper. I love using it in dishes because it adds the heat and smokiness of chipotle peppers, without forcing me to find ways to eat them night after night (or remember to freeze leftovers).

Of course, if you aren’t a spicy food fan, then you can adapt this recipe to be far less spicy – cut the chipotle powder in half or replace it with smoked paprika.
