    Ingredients

    • 1 (11 oz) tube Pillsbury thin crust pizza dough
    • 1 (14.5 oz) can refried beans
    • 1 pound ground beef
    • 1/2 (.1 oz packet) Old El Paso taco seasoning
    • 1 cup homemade or storebought salsa
    • 1 cup homemade or storebought guacamole
    • 1/2 cup sliced black olives
    • 1/2 cup sour cream
    • 1 cup shredded cheddar cheese
    • 1 cup freshly torn lettuce leaves
    • 1 pinch coarse salt

    Directions

    1. 1Preheat oven to 400.
    2. 2Roll the Pillsbury pizza crust out on a floured surface. Using a cookie cutter, cut 12 circles out of the dough. Ball the dough up, roll it out again for 10-12 more circles.
    3. 3Lightly coat a muffin tin with cooking spray. Press each pizza circle into each tin, pressing it up the sides as best you can.
    4. 4Spoon a little of the refried beans into each pizza cup. (You can leave it off of some if desired.)
    5. 5Slide into the oven and bake for 9 minutes, or until slightly puffed and browned.
    6. 6While baking, brown your beef. Drain excess fat, then season with the Old El Paso seasoning and a pinch of salt. Set aside.
    7. 7At this point, you can set out the baked pizza cups, along with the lettuce, olives, sour cream, guacamole, beef, cheese and salsa on the table. You can assemble different variations, or let your guests assemble their own!
    8. 8Serve immediately.

    Dough puffed up so much that there was little room for any more toppings. All my guacamole, lettuce, cheese and salsa sat on top and basically just fell off when the "cupcakes" were picked up. Looked great sitting there, but not practical to grab, hold, and eat. Tasted fine though, once you got a fork and scooped up the bits off of the plate.

    Does seem like a Taco. I guess you can add mushrooms, pizza sauce, and pepperoni and let the guests make it taco or style.
