Tips & Techniques

  • Veggies for Vitamins

    Vegetables offer a host of nutrients, including vitamins A and C and folate to name a few. Be sure to get at least 3 to 5 servings of veggies daily.

Ingredients

  • 1  can (14.5 oz) Green Giant® reduced-sodium cut asparagus spears, drained
  • 1  large tomato, seeded, chopped (1 cup)
  • 1  medium onion, chopped (1/2 cup)
  • 2  tablespoons finely chopped fresh cilantro
  • 2  tablespoons fat-free mayonnaise or salad dressing
  • 1  tablespoon lime juice
  • 3  to 6 drops red pepper sauce
  • 1/8  teaspoon pepper
  • 1  clove garlic, finely chopped
  • Baked tortilla chips, if desired

Directions

  1. 1In blender or food processor, blend asparagus on medium speed until smooth.
  2. 2In medium glass or plastic bowl, mix asparagus and remaining ingredients except tortilla chips. Cover; refrigerate at least 1 hour to blend flavors. Serve with tortilla chips.

I will never, never, NEVER make anything with Fat Free Mayo. There are soooo many fillers and chemicals in reduced fat and fat free mayo; I'll take real avocado-made guacamole and just have a bite or two, instead of a whole bowl of this, thanks.

Next time, though, I am going to steam some fresh asparagus instead of canned. I rarely use canned goods, unless I've canned them myself. Thanks for this recipe!

Sounds good, but "real" guacomole" is just avocados, garlic, a touch of lime or lemon, salt, onions and maybe a bit of finely diced tomatoes.. While the asparagus alternative sounds yummy, don't think it is healthier, gauc doesn't have the bad fat from mayo or sour cream or the added salt from "canned" asparagus.
