Pantry items are used to toss together a fresh antipasto chopped salad with classic Italian ingredients.

Ingredients

  • 1 bag (10 oz) chopped Romaine lettuce
  • 1 cup chopped salami
  • 1 can (6 oz) chopped artichoke hearts (reserve 1/4 cup marinade for dressing)
  • 1/2 cup chopped red roasted peppers
  • 1/4 cup chopped olives (from a can)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste

Steps

    Toss all of the ingredients in a large bowl. Add 1/4 cup of the reserved marinade from the artichokes and toss to coat.

    Salad Bar Option: Toss together everything but the salami, red peppers, olives, and artichokes. Place these items in small bowls and let people add the items they want to their own individual salads.

  • This Antipasto Chopped Salad is like no other salad you’ve ever had! It combines fresh lettuce and salami with items you most likely have in your pantry like jarred artichoke hearts, roasted red peppers, and olives. Antipasto literally means "before the meal" in Italian, but this salad can be a meal in itself, too. I can’t tell you how many times I’ve planned to make a salad, but by the time I got around to make it, my toppings have gone bad. Not with this salad! And the salad dressing couldn’t be any easier. Just take the marinade from your artichokes and toss it with the salad ingredients for a perfectly seasoned salad. The great thing about jarred toppings is that everything is already conveniently chopped for you so you won’t be spending a lot of time in the kitchen. Bagged romaine lettuce and pre-diced salami make this salad come together quickly. A make-it-yourself salad bar is another fun way to serve this salad. Toss together the lettuce, dressing, and spices in a big bowl and then place your toppings in small bowls, letting each person add their own toppings. Salad bars are a sure way to please everyone, and you won’t have people picking toppings out of their salad (which I am definitely guilty of!). This salad would be great for an Italian themed night. The oregano, Parmesan, and red pepper add just the right amount of Italian zing to the salad. My husband couldn't stop eating it. I actually had to take the bowl away!
