Antipasto Chopped Salad

Ingredients

  • 1 bag (10 oz) chopped Romaine lettuce
  • 1 cup chopped salami
  • 1 can (6 oz) chopped artichoke hearts (reserve 1/4 cup marinade for dressing)
  • 1/2 cup chopped red roasted peppers
  • 1/4 cup chopped olives (from a can)
  • 1/4 cup grated Parmesan cheese
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper to taste

Steps

    Toss all of the ingredients in a large bowl. Add 1/4 cup of the reserved marinade from the artichokes and toss to coat.

    Salad Bar Option: Toss together everything but the salami, red peppers, olives, and artichokes. Place these items in small bowls and let people add the items they want to their own individual salads.
