Treat your guests with these Asian-style appetizers ready in just 25 minutes! Enjoy these baked chicken and bell pepper kabobs with a creamy peanut sauce.

Ingredients

KABOBS

bamboo skewers

boneless, skinless chicken breast halves
1
medium green bell pepper, cut into 1-inch squares
1
medium red bell pepper, cut into 1-inch squares

SAUCE

1/2
cup creamy peanut butter
1/2
cup low-fat vanilla yogurt
1/4
cup water
2
tablespoons lite soy sauce
1/4
teaspoon ground red pepper (cayenne)

Directions

  • 1 Heat oven to 375°F. Soak bamboo skewers in water for 15 minutes. Spray 15x10x1-inch baking pan with non-stick cooking spray.
  • 2 Cut chicken diagonally into strips 1/2 inch wide and 3 to 4 inches long. On each skewer, thread 1 piece each of green and red bell pepper and 1 or 2 strips of chicken. Place on sprayed pan.
  • 3 In medium saucepan, combine all sauce ingredients; blend well. Brush some of sauce on chicken pieces.
  • 4 Bake at 375°F. for 10 to 12 minutes or until chicken is no longer pink.
  • 5 Meanwhile, bring remaining sauce to a boil over medium heat, stirring constantly. Boil 1 minute. Serve sauce with kabobs.
