    Ingredients

    • 2 tbsp olive oil
    • 1 stick butter
    • 1  bay leaf
    • 2 ribs celery
    • 1/2 pound spicy loose sausage
    • 3  apples, quartered
    • 1 medium onion, chopped
    • 1  salt and pepper
    • 2 tbsp poultry seasoning
    • 1/4 cup fresh parsley leaves, chopped
    • 8 cups cubed stuffing mix or homemade stuffing
    • 3 cups chicken stock

    Directions

    1. 1Preheat oven to 375 degrees F.
    2. 2Preheat a large skillet over medium heat. Add olive oil to skillet and 4 tablespoons butter.
    3. 3 Lightly brown your sausage and then remove to plate.
    4. 4To the butter, oil, and pan drippings, add bay leaf and then vegetables as you chop them, celery, onions then apples. Sprinkle with salt, pepper and poultry seasoning.
    5. 5Cook 5 to 6 minutes to begin to soften vegetables and apples then add parsley and stuffing cubes to the pan and combine. Moisten the stuffing with chicken broth until all of the bread is soft but not wet.
    6. 6Butter 12 muffin cups with remaining butter. Fill and mound up the stuffing in muffin tins, removing the bay leaf as you find it.
    7. 7Bake muffins until set and crisp on top, 10 to 15 minutes. Remove muffins to a platter and serve hot or room temperature.
