Dinner ready in 15 minutes! Add something special to your fall meal with this salad that features apple, bacon and spinach.

Ingredients

slices bacon
3
tablespoons olive oil
2
tablespoons cider vinegar
2
teaspoons Dijon mustard

teaspoon salt
1/4
teaspoon freshly ground pepper

bag (6 oz) fresh baby spinach leaves

Fuji apple, thinly sliced
1/2
cup sliced red onion
1/4
cup chopped praline pecans

oz blue cheese, crumbled

Directions

  • 1 In 12-inch skillet, cook bacon until crisp; drain on paper towels. Crumble bacon; set aside. Reserve 3 tablespoons of the drippings.
  • 2 In large bowl, mix oil, vinegar, mustard, salt, pepper and reserved bacon drippings with whisk. Add spinach, apple, onion, pecans and reserved crumbled bacon; toss to coat with vinaigrette. Sprinkle with cheese. Serve immediately.
Tips  

Praline pecans add a sweet crunch to this salad. Substitute plain roasted pecans to omit the sweetness.
