    Ingredients

    • 1 tbsp unsalted butter
    • 2 tbsp olive oil
    • 1  Vidalia onion, finely chopped
    • 2  tart apples (I use Granny Smith apples), cored and diced
    • 1 cup chopped walnuts
    • 3 cloves garlic, minced
    • 1/4 cup fresh sage, finely chopped
    • 1 lb (1 loaf) day-old Ciabatta bread, ripped into pieces
    • 1 cup grated provolone cheese
    • 1 cup chicken broth or stock (or vegetable broth)
    • 2 large eggs, lightly beaten

    Directions

    1. 1Preheat the oven to 350 degrees. Prepare your baking dish (glass – 15x10x2 inches) by rubbing the bottom and sides with butter. Set aside.
    2. 2Heat a large skillet over medium heat with the butter and oil inside. Once the butter is melted, add the onions. Cook, stirring occasionally, until softened, about 10 minutes.
    3. 3Add the apples, walnuts, garlic and sage to the skillet and stir to combine. Let cook for two minutes, then transfer to a large mixing bowl.
    4. 4Add the ciabatta bread pieces and cheese to the mixing bowl. Toss well. Pour the chicken broth over and season the mixture with salt and pepper, to taste. Toss well.
    5. 5Add the eggs to the bowl and toss well to combine.
    6. 6Pour the mixture into the prepared pan and spread out into one even layer.
    7. 7Cover with buttered aluminum foil (buttered side down) and bake for 30 minutes. Remove the foil and bake for 15-20 minutes more, until golden.
