Ingredients

  • 1  pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
  • 1/2  cup firm butter or margarine
  • 2  packages (8 oz each) cream cheese, softened
  • 1/2  cup sugar
  • 2  tablespoons all-purpose flour
  • 1  teaspoon vanilla
  • 1  egg
  • 1  can (21 oz) apple pie filling
  • 1/2  teaspoon ground cinnamon
  • 1/4  cup chopped walnuts

Directions

  1. 1Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  2. 2Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  3. 3Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
  4. 4Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
  5. 5Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

I wasn't sure quite how soft the cream cheese filling needed to be so I went with what I had. At first it was pulling up the partially-baked crust, but as the cream cheese sat on the warm crust it started softening and spread much better. For anyone wondering like I was, the consistency should be similar to cake icing - easily spreadable.

This has been a huge hit every time I've made it. It's one of the most requested dishes for family gatherings and goodie days at work! I've even played around with it a bit and had other fruit and spice combos that have been great- peaches with nutmeg and cinnamon; cherries with mint and a hint of cayenne pepper; and blackberries with cumin. You have to tweak the amounts added, but when you get it just right, it's delicious!

Use unsalted butter. It'll make the recipe just a bit sweeter. :) If you only have unsalted, however, it won't ruin the recipe.

I made these last week and shared them with my best friend's family. They were a big hit. Except I had a problem of not having enough oatmeal mix for the top. I would specify the pan size if I were you. To solve my problem on the top, I just added more walnuts. It tasted really good, though. Thanks for contributing the recipe!

Made these for a church pot-luck & everybody raved, Made the first batch using jarred caramel sauce to drizzle over the cooled bars-soft yet good- but after that used caramel hard candies MELTED to drizzle cooled bars . Liked it much better. Yummy

Total hit! Easy to make, not too many ingredients and delicious! I will definitely be making this again! I wasn't sure if I'd like the apples in it, but the apples were actually a small ratio compared to the crumble and cheesecake parts so it was the perfect mixture!
