Apple Walnut Flax Seed Bread

A tasty quick bread inspired by Joy the Baker, a fellow blogger. The combination of shredded and chopped apples give it extra flavor as well as dimension.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 3/4 cup brown sugar, packed
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 generous pinch nutmeg
  • 2/3 cup buttermilk
  • 1/3 unsalted butter melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • 2 large eggs lightly beaten
  • 1 cup grated apples
  • 1/2 cup coarsely chopped apples
  • 1 tablespoon flax seeds
  • 3/4 cup coarsely chopped walnuts, divided
  • Cinnamon and sugar for sprinkling

Steps

    Preheat oven to 350°F. Grease and flour a 9×5×3-inch loaf pan and set aside.

    In a medium bowl, whisk together flours, sugar, salt, baking powder, baking soda, cinnamon and nutmeg.

    In a small bowl, whisk together buttermilk, eggs, melted butter and vanilla extract. Mix the wet ingredients into the dry ingredients.

    Add the grated apples, chopped apples flax seeds and half of the chopped walnuts. Fold to incorporate thoroughly.

    Spoon batter into prepared pan and top with granulated sugar, cinnamon and the rest of the walnuts.

    Bake for 40 to 50 minutes or until a skewer inserted in the center of the loaf comes out clean. Let cool in the pan for 15 minutes then invert onto a cooling rack to cool completely.

  • I can't tell you how many times I wish I had this bread baked already for me, waiting in the refrigerator or on my kitchen table. 

    Sometimes I can't quite put my finger on a craving, and then I think of this loaf, and nine times out of 10 it fits the bill. It is a Renaissance loaf, if you will.

    I first made this bread on my blog back when we first moved into our new apartment. Where I once had a bright, open, airy kitchen with pretty countertops, I ended up with a poorly lit kitchen, a tiny oven and very, very ugly countertops. Baking this bread was my way of coping with my sad kitchen transition, and I cheered up knowing that though my new kitchen was substandard, it delivered when it came to making breads -- especially ones that are so versatile in flavor.

    This Apple Walnut Flaxseed Bread is one part sweet, one part crunchy, one part crumbly, one part cakey and all parts delicious. It will make your kitchen smell delightfully like cinnamon, apples and sugar -- perfect for a chilly weekend afternoon. Plus, it's a quick bread, so you don't have to have too much patience when it comes to eating -- er, baking -- it.

    This bread leaves a lot of room for creativity, so add more ingredients, like oats or raisins, or extract ingredients that don't sound so appetizing to you. Just be sure to keep that amazing sugary walnut topping -- it might seem like overkill when you sprinkle everything on before putting it in the oven, but once it bakes in, you'll be glad you didn't hold anything back -- including your appetite.
