This is an Italian interpretation of a classic Chinese chicken salad. Purchased coleslaw mix makes this salad quick to prepare.

Ingredients

Tangy Peanut Dressing

uncooked manicotti shells

cups coleslaw mix
1 1/2
cups finely chopped cooked chicken breast

cup fresh bean sprouts, finely chopped
1/2
cup peanuts, chopped
1/4
cup canned water chestnuts, chopped

Directions

  • 1 Make Tangy Peanut Dressing.
  • 2 Cook and drain manicotti as directed on package. Rinse with cold water; drain.
  • 3 Finely chop 1 cup of the coleslaw mix. Mix finely chopped coleslaw mix, the chicken, bean sprouts, peanuts and water chestnuts.
  • 4 Fill manicotti shells with chicken mixture. Divide remaining coleslaw mix among 4 serving plates. Top with manicotti. Drizzle with dressing.
Tips  

Manicotti, also known as cannelloni, is a 4-inch tubular noodle that is usually stuffed and baked. Cannelloni is from the Italian word canna, which means “hollow cane.”

Save even more time by using 2/3 cup of a purchased peanut dressing instead of making Tangy Peanut Dressing.
