    You can also use 4 cups of shredded cabbage instead of the bag of coleslaw mix.

Ingredients

  • Peanut Dressing
  • 1/2  cup Italian dressing
  • 2  tablespoons peanut butter
  • 1  tablespoon soy sauce
  • Coleslaw
  • 1  bag (16 ounces) coleslaw mix
  • 1  can (11 ounces) mandarin orange segments, drained
  • 1  small jicama (about 1 pound), peeled and cut into 1/2-inch cubes (2 cups)
  • 1/2  cup peanuts

Directions

  1. 1In small bowl, mix all dressing ingredients with wire whisk until smooth.
  2. 2In large bowl, toss coleslaw mix, orange segments and jicama. Toss with dressing. Sprinkle with peanuts.
