Ingredients

MARINADE

cup oil

tablespoons soy sauce

tablespoons dry sherry

teaspoon grated gingerroot

garlic cloves, minced

FISH

4
(4-oz.) halibut steaks (3/4 to 1 inch thick)

Directions

  • 1 GRILL DIRECTIONS: In 12x8-inch (2-quart) baking dish or resealable foodstorage plastic bag, combine all marinade ingredients; mix well. Place halibut in marinade; turn to coat. Cover dish or seal bag. Refrigerate 4 to 6 hours to marinate, turning occasionally.
  • 2 Heat grill. When ready to grill, generously oil wire grill basket or carefully oil grill rack. Remove fish from marinade; reserve marinade. Place fish in well-oiled grill basket or directly on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 14 minutes or until fish flakes easily with fork, turning once and brushing frequently with marinade. Discard any remaining marinade.
Tips  

Halibut's mild flavor is a good foil for this Asian-inspired ginger-soy marinade. The fish's firm texture makes it especially well-suited to grilling because it can be turned without crumbling. Even so, we recommend you oil the grill rack or basket to prevent sticking.

To broil halibut, place on oiled broiler pan; broil 4 to 6 inches from heat using times above as a guide and brushing frequently with marinade.
