Ingredients

  • 1 head Napa cabbage, sliced thin and rinsed
  • 2 large carrots, grated
  • 1  red pepper, halved and sliced thin
  • 1 3-inch piece of fresh ginger, grated
  • 1/2 cup rice vinegar
  • 1 tbsp low sodium soy sauce
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 cup smooth peanut butter
  • crushed red pepper

Directions

  1. In a large bowl, combine the Napa cabbage, carrots and red pepper. Stir to combine.

  2. Add the ginger, vinegar, soy sauce, lemon juice, olive oil and peanut butter to the bowl of a food processor. Add a couple xxxxxxx of crushed red pepper (not too much!). Pulse until well mixed.

  3. Pour the dressing over the cabbage mixture and toss well to combine.

  4. Serve.

    I was disappointed in it. The peanut butter overwhelmed the rice wine vinegar, which should have been more of a player in this recipe. And it might have been better with something crunchy like chopped peanuts tossed onto the salads just before serving.
