Avocado and Red Pepper Israeli Couscous

The creamy avocado goes so well with the soft, fluffy couscous. And the red peppers add a bit of sweetness and crunch to the dish. It’s subtly flavored, and so, so good.

    Ingredients

    • 1 3/4 cup water
    • 1 tbsp olive oil
    • 1 1/3 cup Israeli couscous
    • 1  avocado, diced
    • 1/4 cup diced red pepper
    • 2 tbsp key lime juice
    • salt and pepper, to taste

    Directions

    1. 1Combine the water and olive oil in a medium saucepan and bring to a boil. Stir in couscous, reduce heat to low and cover. Cook for 12 minutes or so, until the water is fully absorbed.
    2. 2Add the avocado, red pepper, lime juice and salt and pepper. Stir to combine. Serve immediately.
    3. 3Have leftovers? You can save this in a tightly covered container for up to one day.

    This has the potential to be a nice mild side dish, but it needs a little bit more. I added some garlic and onion power to taste and it kicked up the flavor just enough without overpowering a mild main dish like fish.

    This was good but only ok. I'm not sure if it was a user error on my part but it came out a little bland. All of the ingredients are things that I love but it required a lot of salt to be really good.
