    Ingredients

    • 1 Ripe Avocado
    • 1 1/2 Cups Vanilla Ice Cream
    • 1/2 Cup Milk
    • 2/3 Cups Heavy Whipping Cream (topping)
    • 1 Lemon Zest only (topping)
    • 1 Tablespoon Sugar (topping)
    • 1/2 Teaspoon Vanilla Extract (topping)
    • 2 Marascino Cherries (topping)

    Directions

    1. 1For the whipped cream, add cold heavy cream to a cold bowl (preferably stainless steel). Add sugar and vanilla. Whisk until it forms stiff peaks. Fold in lemon zest. Refrigerate until needed.
    2. 2Cut avocado in half and remove seed with a knife (be careful).
    3. 3Add ice cream, milk, and avocado to a blender. Blend until smooth!
    4. 4Split avocado shake between two glasses and top with lots of lemon whipped cream.
    5. 5Garnish with a cherry!

    Surprisingly good. Very creamy! I added another 1/2 cup of ice cream for to improve the consistency. Like the recipe says it makes a small amount, but I found that even splitting that into four portions was enough for 4 people. Next time, I think I am going to add the zest to the shake instead of it being a topping.
