Avocado Quick Bread

A deliciously sweet (and unusual) way to use those buttery, green fruits.

Ingredients

stick butter, softened
1/2
cup sugar
1/2
cup light brown sugar

ripe medium avocados
3
teaspoon fresh lemon juice, divided

cup milk
2
eggs, beaten
2
cups all-purpose flour
1/2
teaspoon salt
1/2
teaspoon baking soda
1 1/2
teaspoon baking powder
1/4
teaspoon ground cinnamon
1/4
teaspoon cloves powder

Directions

  • 1 Preheat oven to 350°F.
  • 2 In a large bowl, mix together butter and both sugars until creamy.
  • 3 In a separate medium bowl, mash the peeled and pitted avocados with 2 tsp of the lemon juice. Add the mixture to the butter and sugar and stir.
  • 4 In a small bowl, combine milk with remaining lemon juice and let sit for 5 minutes. Add milk to butter/sugar/avocado mixture along with the beaten eggs and stir.
  • 5 In a separate bowl, mix together flour, salt, baking soda, baking powder, cinnamon and cloves. Add mixed ingredients to the batter and stir together to fully incorporate. Transfer batter to a greased 9 x 5-inch loaf pan.
  • 6 Bake until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in pan on a wire rack for about 10 minutes, then remove from pan and cool completely on wire rack. Bread tastes better after overnight refrigeration.

If you answered "yes" to all three questions, you are correct (and one smart cookie)! Now that we've played that funny little game, let's discuss this delicious Avocado Quick Bread.


A lot of people struggle with what to do with an avocado, including me. The obvious go-to recipe is guacamole, but some even slice them on top of a sandwich, chop them up in a salad or put them in soups. Being that I'm primarily a baker of bread, I just had to figure out a way to incorporate these buttery, green fruits into a loaf.

Avocados tend to pair well with sweeter foods, like cherry tomatoes, strawberries or oranges. But considering tomatoes, strawberries and oranges wouldn't do so well in a loaf of bread, I decided to go with ground cinnamon and cloves, giving the quick bread a dense, smooth and ever-so-slightly sweet taste. It was almost like summer and fall swirled together in a cakey tea bread. If that's not enough to whet your appetite, there's also a solid cup of sugar and one whole stick of butter in this recipe to sweeten the deal.


This quick bread is certainly best baked (and eaten) in moderation, but alongside a cup of ginger orange tea, it's the best thing since boring old banana bread.
