    Ingredients

    • 16 slices bacon
    • 1 can (16.3 oz) Pillsbury Grands! Homestyle refrigerated buttermilk biscuits
    • 8  eggs
    • salt and pepper, if desired

    Directions

    1. 1Heat oven to 350 F. In 10-inch skillet, cook bacon over medium heat about 4 minutes or until cooked but not crisp, turning once. (It will continue to cook in the oven.) Set aside.
    2. 2Spray 8 jumbo muffin cups or 8 (6-oz) glass custard cups with cooking spray. Separate dough into 8 biscuits. Place 1 biscuit in each muffin cup, pressing dough three-fourths of the way up sides of cups. Place 2 bacon slices in each biscuit cup, and crack an egg over each. Season with salt and pepper.
    3. 3Bake 25 to 30 minutes or until egg whites are set. Run a small knife around cups to loosen. Serve immediately.

    What a great idea! I also found a similar recipe on Martha Stewart website. There is a video to view on how to cook this recipe. The only thing different is that white bread is used. First the bread is pressed somewhat flat (or can use a rolling pin.) Then the bread is cut out in a circle by a biscuit cutter. Then the circle is cut in half. Both halves of the cut bread circle are then pressed into the muffin tin. The partially cooked bacon is put on top, then the egg over that. When all is cooked, it is ready to eat. The cook just ate this delicious looking "eats" by hand. Easy. I can't wait to try this.

    I used ham instead of bacon (no precooking) and add hollandaise sauce....wow!! Next time I'll use reg biscuits since my extra large eggs overflowed my regular sized cupcake pans.

    Ohmigawd! These are amazing. Pretty quick and easy, I sprinkled the cheese over the eggs when they had about 7 minutes left and it was fantastic. Next time I'm going to sprinkle a little cheese between the pressed biscuits and the bacon as im putting them together. My 5 year old daughter loves how it is her own special breakfast cupcakes!

    Ok...I have made these a few times now and each time they just get better and better!!! My boyfriend loves them so much he asked me to make them for his office. A couple tweaks though....I added chives/green onion and topped with cheese, this is a MUST! Definitely takes them to another level. Also the recipe's cooking time is too long, that's probably why some didn't like the egg texture. If you bake them for the whole 25 mins you will end up with overcooked rubbery eggs, I found right under 20 mins the eggs came out just perfect....not overcooked but cooked just enough that everything is solid. These have already become a more staple in my house, so Yummy and Easy!!
