  • Servings 1

Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup jarred alfredo sauce
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 1 pinch coarse salt
  • 4 small purple potatoes, sliced thinly with a mandolin
  • 2 teaspoon extra-virgin olive oil
  • 7 slices bacon

Steps

  • 1
Arrange the bacon slices on a cooling rack. Place it on a rimmed baking sheet and place in a cold oven. Preheat to 400°F. Set your timer for 20 minutes. Once 20 have passed, remove the bacon from the oven. Leave the oven on.
  • 2
In the meantime, heat the oil in a medium skillet. Add the sliced potatoes and sauté until they brown and become slightly crispy, 7 minutes. Add a pinch of salt.
  • 3
Drain the bacon fat from the baking sheet and flip it over. Lightly grease the underside. Roll the dough onto the sheet. Prebake for 6 minutes.
  • 4
Spoon the alfredo sauce over the crust. Arrange the potatoes in the upper left hand corner of the pizza. You may overlap them, or lay them side by side. Arrange the bacon to the right and under the potatoes, creating stripes.
  • 5
Sprinkle the cheese between the bacon stripes. If you want, you can create little cheese stars on the potatoes.
  • 6
Bake pizza an additional 6 to 10 minutes, or until the cheese is melted, browned and bubbly.
