Ingredients

  • 5  slices bacon
  • 1  (8-oz.) pkg. cream cheese, softened
  • 2  tablespoons milk
  • 2  eggs
  • 2  oz. (1/2 cup) shredded Swiss cheese
  • 2  tablespoons chopped green onions
  • 1  (12-oz.) can Pillsbury® Golden Layers® Refrigerated Biscuits

Directions

  1. 1Heat oven to 375°F. Spray 10 muffin cups with nonstick cooking spray. In medium skillet, cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.
  2. 2Meanwhile, beat cream cheese in small bowl until smooth. Gradually add milk and eggs, beating at low speed until smooth. Stir in Swiss cheese and onions. Set aside.
  3. 3Separate dough into 10 biscuits. Press or roll each to form 5-inch round. Place 1 biscuit round in each sprayed muffin cup; firmly press in bottom and up sides, forming 1/4-inch rim. Place half of bacon in bottom of dough-lined muffin cups. Spoon cheese mixture evenly into cups.
  4. 4Bake at 375°F. for 21 to 26 minutes or until filling is set and edges of biscuit cups are golden brown. Sprinkle each with remaining bacon; lightly press into filling. Remove biscuit cups from pan.

This is great but you can also use the premadepie crust. used to do this for Tea parties at nursing homes. They loved it!

Booms should try reduced sodium bacon and there is also reduced xxxxxxxxx cream cheese and the eggs can be replaced with egg substitutes. You can reduce the 'bread' by tearing the biscuit in 1/2. works well that way!

Thanks everyone, I took all the advice and made a dozen of these heavenly quiche biscuits and was impressed. Ill have to double the recipe next time, by demand. =)

I think I mistook parts of the recipe, because mine were filling over the sides of the muffins? the recipes says 5 in rolls, but regular biscuits aren't nearly that size?

Is there a way to make these into an "overnight" dish? Can I get the biscuits all ready to go, refrigerate them covered, and fill them in the morning and bake? Also, I don't like cream cheese, can I just leave it out?

This recipe was incredibly easy and unbelievably delicious! My only problem with it is that it looks WAY too healthy for something that is sinfully loaded with calories and fat. :-)
