    Ingredients

    • QUICHE
    • 1  9-inch unbaked pastry shell*
    • 1  tablespoon flour
    • 4  eggs
    • 1 3/4  cups milk
    • 1 1/2  cups shredded Swiss cheese
    • 1/2  lb. bacon, crisply cooked, finely crumbled
    • 1/4  teaspoon salt
    • 1/8  teaspoon nutmeg
    • Dash cayenne pepper
    • SAUCE
    • 2  tablespoons margarine or butter
    • 3  tablespoons flour
    • 1/8  teaspoon white pepper
    • 1  cup chicken broth
    • 1  tablespoon lemon juice
    • 1  (3-oz.) can B in B® Sliced Mushrooms or B in B® Garlic Mushrooms, undrained
    • 1  tablespoon chopped fresh parsley

    Directions

    1. 1Heat oven to 375°F. Sprinkle 1 tablespoon flour over bottom of pastry shell. In medium bowl, slightly beat eggs. Add milk, cheese, bacon, salt, nutmeg and cayenne pepper. Pour filling mixture into prepared pastry shell. Bake at 375°F. for 35 to 40 minutes or until eggs are set. Cool 10 minutes before cutting.
    2. 2In small saucepan, melt margarine. Blend in 3 tablespoons flour and white pepper; gradually add chicken broth and lemon juice. Cook over medium heat until mixture thickens, stirring constantly. Stir in undrained mushrooms and parsley; heat thoroughly. Serve sauce over quiche; serve immediately.
