Looking for a new way to serve cauliflower? Try this yummy veggie casserole!

Ingredients

cups cauliflowerets (1 pound)
1
cup chopped fresh mushroom (4 ounces)
1/2
cup chopped red onion
1
tablespoon olive or vegetable oil
2
teaspoons lemon juice
2
teaspoons cider vinegar
1/2
teaspoon salt
1/4
teaspoon pepper
2
garlic cloves, finely chopped
1/3
cup chopped green onion

Directions

  • 1 Heat oven to 350ºF. Spray square baking dish, 9x9x2 inches, with cooking spray.
  • 2 Mix all ingredients except green onions. Spread evenly in baking dish.
  • 3 Bake uncovered 40 to 45 minutes, stirring occasionally, until vegetables are tender and golden brown. Sprinkle with green onions.
Tips  

Cauliflower may be the smartest vegetable around. Mark Twain once referred to it as “cabbage with a college education.”

No red onion on hand? You can use a yellow onion instead, although you’ll miss out on the hint of sweetness and color that the red onion brings.
