Baked Peach Oatmeal

This make-ahead method makes it easy to serve oatmeal to a crowd. It is slightly firmer than the stove-top version, so you can cut it into squares.

Ingredients

  • 3  cups skim milk
  • 2  tablespoons vanilla
  • 1  (8-oz.) carton (1 cup) refrigerated or frozen fat-free egg product, thawed
  • 5  cups quick-cooking rolled oats
  • 1 1/2  cups firmly packed brown sugar
  • 4  teaspoons baking powder
  • 3  teaspoons cinnamon
  • 1/2  teaspoon salt, if desired
  • 1/4  cup margarine or butter, melted
  • 2  cups chopped frozen unsweetened sliced peaches*

Directions

  1. Spray 13x9-inch (3-quart) baking dish with nonstick cooking spray. In large bowl, combine milk, vanilla and egg product; blend well. Add oats, brown sugar, baking powder, cinnamon and salt; mix well. Stir in margarine and peaches until well combined. Pour mixture into sprayed dish; cover with plastic wrap. Refrigerate at least 3 hours or overnight.

  2. Heat oven to 350°F. Uncover baking dish; bake 40 to 45 minutes or until slightly puffed and golden brown. Let stand 10 minutes before serving. Cut into squares; place in individual bowls. If desired, top with nonfat vanilla yogurt or skim milk.
