Chicken casserole gets a tasty upgrade with baked red potatoes and barbecue sauce.

Ingredients

7
cups cubed red potatoes (about 2 1/2 lb)
3
tablespoons olive oil
3/4
teaspoon salt
1/2
teaspoon freshly ground pepper
1
lb pulled smoked chicken
3/4
cup barbecue sauce
8
slices bacon, crisply cooked, crumbled
2
cups shredded sharp Cheddar cheese (8 oz)
1 1/2
cups sour cream
1/2
cup chopped green onions
Red pepper sauce, if desired

Directions

  • 1 Heat oven to 400°F. Generously spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • 2 In large bowl, toss potatoes, oil, salt and pepper. Spoon into baking dish. Bake uncovered 40 minutes, stirring halfway through bake time, or until potatoes are tender inside and crispy outside.
  • 3 In medium bowl, mix chicken and barbecue sauce. Spoon over baked potatoes; sprinkle with bacon and cheese. Bake 12 minutes or until chicken is hot and cheese is melted.
  • 4 Spoon sour cream over individual servings. Sprinkle with onions. Serve with pepper sauce.
