Ingredients

  • 4  large baking potatoes
  • 4  slices bacon
  • 6  cups milk
  • 1/2  cup all-purpose flour
  • 4  green onions, sliced
  • 5  oz. (1 1/4 cups) shredded sharp Cheddar cheese
  • 3/4  teaspoon salt
  • 1/4  teaspoon pepper
  • 1  (8-oz.) container sour cream

Directions

  1. 1Pierce potatoes with fork; place on microwave-safe paper towel or roasting rack in microwave. Microwave on HIGH for 15 to 20 minutes or until tender, turning once halfway through cooking. Cool slightly.
  2. 2Meanwhile, cook bacon in Dutch oven over medium heat until crisp. Remove from Dutch oven; drain on paper towels. Crumble; set aside.
  3. 3In same Dutch oven, combine milk and flour; blend well. Cook over medium heat about 15 minutes or until bubbly and thickened, stirring frequently. Remove from heat.
  4. 4Cut cooked potatoes in half. Scoop out cooked potato from skins; place in medium bowl. Discard skins. Mash potatoes well.
  5. 5Add potatoes, bacon, 2 tablespoons of the onions, 1 cup of the cheese, salt and pepper to milk mixture. Cook and stir until cheese is melted. Add sour cream; cook and stir until soup is thoroughly heated.
  6. 6To serve, spoon soup into individual bowls. Sprinkle each with remaining onions and cheese.

I made this tonight and it was wonderful! had to add a little "Tonys" to it for some more flavor. But had it with hard crusted home made bread .. wonderful!!! gonna try Pooker2004 suggestion with the potato skins tomorrow if there is any left over.

Very good! I left the skins on half the potatoes, and put the rest in with the soup (after mashing them of course). I chose not to use the same pan for the bacon in order to reduse the grease. I also used Lactaid fat-free milk and fat-free sour cream to make it a little lighter.

I rubbed my potatoes with olive oil and sea salt and baked them in the oven for an hour at 400 degrees. I then froze my potato skins and deep fried them the next day & loaded them up with the same fixings for the soup. Soup was delicious and the loaded tato skins were great! Recipe is definitely a keeper! 5 STARS from my husband and I!

I love potaoe soup will try this. the potato skins are awesome I mix olive oil and parmeasan cheese salt pepper paprika rub that on the potatoe then bake and add bacon and cheese bake for a min. or two then add sour cream! sooooo good

Spray a little butter in them, sprinkle with crumbled bacon, and a little cheese. Bake about ten minutes, and when they come out, put a dab of sour cream and chives or green onions on them. Can't wait to try this, my hubby loves potato soup? When making the soup and it says to use the same dutch oven as the one you prepared the bacon in are you suppose to drain the bacon oil from the oven first or is it part of the soup?
