Baked Potatoes on the Grill

No need to heat up your house to enjoy a nice baked potato. Keep the house cool by grilling your potatoes instead!

Ingredients

baked potatoes

(12 ounce) package frozen broccoli florets
1
(6 ounce) Yoplait® Greek plain yogurt (optional)
Cheddar shredded cheese (optional)
Aluminum foil

Directions

  • 1 Preheat grill to medium high.
  • 2 Wash baked potatoes and wrap in heavy duty aluminum foil.
  • 3 Place baked potatoes on the grill and cook for 55-60 minutes, rotating about every 10-15 minutes.
  • 4 Serve with a dollop of yogurt and a sprinkle of cheese.

Just because it’s summer doesn’t mean you have to give up one of your favorite side dishes -- baked potatoes.


Phew! Is anyone else melting out there?

Baked potatoes are usually in cooked in oven for about an hour, which is a recipe for a hot and sticky house. When I think about turning on the oven for an hour, it makes me cringe because all I can think about is the sweat running down my back from the heat in my house.

I bet you didn’t know that you can grill baked potatoes and get the same yummy effect. Yep, just wrap some potatoes in foil and throw them on the grill while you’re grilling your meat.

These Baked Potatoes on the Grill aren’t too temperamental but you do want to make sure you give ‘em a little turn every once in a while so you don’t end up with any scorched sides.

Dress them up however you want, but I always like mine with some broccoli and cheese. We’re also boycotting the stove here and using these Green Valley Steamers that heat up quickly in the microwave to the perfect tenderness.

I try to keep my baked potatoes on the healthy side and just add a sprinkle of cheese. To lighten things up, use a dollop of Greek yogurt instead of sour cream. You can hardly tell the difference -- I promise you!
