    Ingredients

    • 4 4-ounce tilapia fillets
    • 1 can diced tomatoes with olive oil and garlic
    • 1  shallot, chopped
    • 1/4 cup white wine

    Directions

    1. 1Preheat oven to 350 degrees
    2. 2Place the tilapia fillets in a single layer in a shallow baking dish. Pour the tomatoes over and then sprinkle with the shallots. Drizzle the white wine evenly throughout the dish.
    3. 3Bake for 20 minutes, then stir. Return to the oven and bake for an additional 10 minutes. Stir again, and check for doneness. The tilapia should flake easily with a fork. If not, return it to the oven for an additional 5-10 minutes.
