It’s easy to top a good thing! Transform ordinary blueberry muffins into extraordinary bakery-style muffins with a simple streusel topping.

Ingredients

3
tablespoons sugar
2
tablespoons Gold Medal™ all-purpose flour
1 1/2
teaspoons shortening
1
package Betty Crocker™ wild blueberry muffin mix
1
cup water
3
tablespoons vegetable oil
1
egg

Directions

  • 1 Heat oven to 425ºF. Place paper baking cups in 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  • 2 Mix sugar and flour in small bowl. Cut in shortening, using pastry blender or fork, until mixture looks like fine crumbs; set aside.
  • 3 Drain blueberries; rinse and set aside. Stir muffin mix, water, oil and egg in medium bowl just until blended. Gently stir blueberries into batter. Divide batter evenly among muffin cups. Sprinkle 1 1/2 teaspoons crumb mixture over batter in each cup.
  • 4 Bake 20 to 25 minutes or until muffins are golden brown around edges.
Tips

Hang on! Lightly pressing the streusel topping on top of the muffins will help it hang on when the muffins rise.

Pack that streusel topping with an extra flavor punch with a dash of cinnamon. Stir in 1/8 teaspoon ground cinnamon with the sugar and flour.
