    Ingredients

    • 1/2  cup margarine or butter, softened
    • 1/2  cup firmly packed brown sugar
    • 1 1/2  cups (3 large) mashed ripe bananas
    • 1/4  cup milk
    • 1  teaspoon vanilla
    • 2  eggs
    • 2  cups All Purpose or Unbleached Flour
    • 1  teaspoon baking powder
    • 1  teaspoon baking soda
    • 1/4  teaspoon salt
    • 1/2  cup miniature chocolate chips
    • 1/2  cup chopped walnuts

    Directions

    1. 1Heat oven to 375°F. Grease bottoms only of 18 muffin cups or line with paper baking cups. In large bowl, beat margarine and brown sugar until fluffy. Add bananas, milk, vanilla and eggs; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, baking soda and salt; stir just until dry ingredients are moistened. Stir in chocolate chips and walnuts. Fill greased muffin cups 2/3 full.
    2. 2Bake at 375°F. for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 3 minutes before removing from pan. Serve warm.
    3. 3MICROWAVE DIRECTIONS: Prepare muffin batter as directed above. Using 6-cup microwave-safe muffin pan, line each cup with 2 paper baking cups to absorb moisture during cooking. Fill cups 1/2 full. Microwave 6 muffins on HIGH for 2 to 2 1/2 minutes or until toothpick inserted in center comes out clean, rotating pan 1/2 turn halfway through cooking. Remove muffins from pan and discard outer baking cups immediately. Cool 1 minute on wire rack before serving. Repeat, making 12 additional muffins.

    Excellent & very tasty. Moist, dark color, made 12 med sized muffins, I added 12 cup raisins with the choc chips & used 1/4 cup splenda brown instead. Already one of my favorite muffins to whip up quickly. Danni
