    Ingredients

    • 1  (15-oz.) box Pillsbury® Refrigerated Pie Crusts
    • 1  teaspoon flour
    • FILLING
    • 3/4  cup sugar
    • 1/2  cup All Purpose or Unbleached Flour
    • 1/4  teaspoon salt
    • 2 1/4  cups milk
    • 2  eggs, slightly beaten
    • 3  tablespoons margarine or butter
    • 1 1/2  teaspoons vanilla
    • 2  bananas
    • 1/2  cup whipping cream, whipped, sweetened
    • 1/2  cup banana slices

    Directions

    1. 1Heat oven to 450°F. Prepare pie crust according to package directions for unfilled one-crust pie using 9-inch pie pan. (Refrigerate remaining crust for later use.) Bake at 450°F. for 9 to 11 minutes or until light golden brown. Cool.
    2. 2Lightly spoon flour into measuring cup; level off. In medium saucepan, combine sugar, flour and salt. Stir in milk and eggs; blend well. Cook over medium heat until mixture thickens and boils, stirring constantly. Boil 1 minute, stirring constantly. Remove from heat. Add margarine and vanilla; stir until margarine is melted. Thinly slice 2 bananas into cooled crust. Pour filling over bananas.
    3. 3Place plastic wrap or waxed paper on hot filling to prevent film from forming. Cool; refrigerate 4 hours or until filling is set. Just before serving, garnish with whipped cream and banana slices. Store in refrigerator.
    4. 4MICROWAVE DIRECTIONS: Prepare pie crust according to package directions for unfilled one-crust pie using 9-inch microwave-safe pie pan. Microwave as directed on package. Lightly spoon flour into measuring cup; level off. In medium microwave-safe bowl, combine flour, sugar and salt; blend well. Stir in milk and eggs; blend well. Microwave on HIGH for 9 to 10 1/2 minutes or until mixture boils and thickens, stirring every 2 minutes with wire whisk. Add margarine and vanilla. Stir until margarine is melted. Continue as directed above.
