    Ingredients

    • 6 large bananas (not too ripe!)
    • 1 package Spring Roll wrappers (NOT egg roll wrappers)
    • caramel sundae sauce
    • cinnamon
    • chopped peanuts
    • oil for frying
    • Vanilla ice cream

    Directions

    1. 1Peel & slice bananas lengthwise, then into half to make 24 "wedges".
    2. 2Place the spring roll wrapper in front of you, as a diamond. Place a banana wedge above the bottom corner, sprinkle lightly with cinnamon. Fold the bottom corner over the banana & proceed to roll up, folding in the left & right corners, then closing with the top corner. It should resemble an envelope. You can seal the corner with a finger tip of water. Proceed with all 24.
    3. 3Deep fry the wrapped banana's until slightly brown and they start to float- 3 -5 minutes, drain on paper towels.
    4. 4Serve warm with a drizzle of caramel, a sprinkling of peanuts. and a scoop of vanilla ice cream. Enjoy!
