Ingredients

very ripe or overripe bananas
2
tablespoons fat-free (skim) milk
1
tablespoon packed brown sugar
1
teaspoon rum extract
1/2
teaspoon vanilla

Directions

  • 1 In food processor, place bananas, milk and brown sugar. Cover; process 45 seconds or until smooth and creamy. Add rum exteract and vanilla; process with 4 or 5 quick on-and-off motions to combine.
  • 2 Transfer mixture to container with tight-fitting lid. Freeze at least 1 hour 30 minutes, stirring occasionally, until desired consistency.
Tips  

Be sure to use very ripe to overripe bananas—the peels should be spotted brown—for this recipe. Bananas that are less ripe will result in a bitter ice cream.
